Fruity Lettuce Salad

This is one of those "not really a recipe" recipes. It's more of a list of ingredients that work well together...you can adjust quantities based on your goals and tastes. Try out this refreshing combination today!

Ingredients:

Spring mix or romaine

Cooked and diced chicken breast

Grapes, halved

Strawberries, sliced

Canned mandarin oranges, drained - optional

Shredded mozzarella cheese or feta cheese - optional

Toasted or candied almonds - optional

Dressing: your favorite raspberry vinaigrette or poppyseed dressing. My favorites (based on flavor, ingredient list, and macros) are Bolthouse Farms Raspberry Merlot and Panera Bread Poppyseed.

Instructions:

Make a big bowlful or a single serving, and enjoy! Healthy food does not mean bland and boring! Bonus: even the pickiest kids tend to like this salad 😊
