Chicken Parmesan (or fish)

This is my go-to fast-and-healthy chicken recipe...if your chicken is thawed, you can have this on the table in 30 minutes or less. You can also make something similar with fish instead of chicken!


4-6 pieces of chicken breast, approx 4-6 oz each, trimmed of visible fat

2 tsp olive oil (optional)

½ C shredded or shaved Parmesan cheese (the real stuff, not the grated "cheese" from the can)

¼ C panko bread crumbs (optional)

1 tsp each parsley and oregano

¼ tsp each salt, pepper, and paprika


Preheat oven to 400. Put chicken in a greased dish. Drizzle evenly with olive oil. Sprinkle evenly with all ingredients. Bake 20-25 minutes or until chicken is cooked through. These toppings can also be used for any white fish (not salmon). Bake fish according to directions on package.
